These banana pancakes are a simple, delicious twist on a classic breakfast favorite. With a light, fluffy texture and a hint of banana in every bite, they’re perfect for a quick, satisfying morning treat.

Combine water, eggs and mashed bananas in a bowl until combined. Gently add the pancake mix into the bowl, stiring slowly with a spoon for 3- 4 minutes until combined. Avoid overmixing or stirring too vigorously. Allow the mixture to stand for 2-3 minutes Gently mix it again for 2 minutes before pouring.
Heat the Pan over medium heat until drops of water sizzle and disappear. Ensure the pan is not too hot for perfect pancakes. Coat the pan with oil or clarified butter to prevent sticking.
Pour about a quarter cup batter for each pancake onto pan.
Once the batter hits the pan, cook each side for about 1 to 1.5 mins on each side or until the bottom is golden brown or the bubbles on the top start to pop. Time to Flip!
Serve with maple syrup or honey topped with more bananas!!
