Get ready to Flip
Heat the griddle over medium heat until drops of water sizzle and disappear. Ensure the pan is not too hot for perfect pancakes. Coat the pan with oil or clarified butter to prevent sticking.
Whisk it up
Combine pancake mix, water, oil and eggs in a medium bowl and gently stir with a spoon for 3-4 minutes, until large lumps are dissolved. Allow the mixture to stand for 2 minutes. Avoid overmixing or stirring too vigorously. Gently mix it again for 2 minutes before pouring.
Pour
Pour about a quarter cup batter for each pancake onto pan.
Cook to perfection
Once the batter hits the pan, cook each side for about 1 to 1.5 mins on each side or until the bottom is golden brown or the bubbles on the top start to pop. Time to Flip!
